Changing the destination never overwrites the order's history — it appends a new, separately-priced destination row and locks every prior one. The full sequence of rows is a permanent audit trail of how (and why) the price changed over time. Overriding a price by hand works the same way: the calculated amount stays on the record, the override is marked wherever that price appears, and every override appends a row to the override log with who changed what, from what to what, and why.
This doesn't replace the current destination — it appends a new row below with its own recalculated price. The old destination stays on the record, locked, permanently.
